Chocolate Macaroons


1 cups unsweetened coconut
1 cup almond meal (this is simply ground almonds, make your own or buy)
1/4 cup pure maple syrup (organic, grade B is the best)
3/4 cup raw cacao powder
2 tsp pure vanilla extract
1/4 cup coconut oil
1/4 tsp sea salt


Mix ingredients and roll into golf ball sized balls. Freeze to set and place in fridge until serving.


Chocolate Pudding

2 servings, recipe from Practical Paleo by Diane Sanfilippo

I know this recipe sounds crazy, but try you it, you will love it!


2 ripe avocados, peeled & quartered with pit removed

1/2 teaspoon vanilla extract

1/4 cup cacao powder

2-4 Tablespoons coconut milk

1 ripe banana

1-4 tablespoons real maple syrup or raw honey (optional & to taste)

Pinch of cinnamon

Pinch of sea salt


Put all ingredients in a blender and process until smooth, occasionally scraping down sides. Serve immediately or refrigerate until you're ready to serve.


Chocolate Cherry Smoothie


1 cup unsweetened coconut or almond milk (or more to thin)

1 cup organic frozen cherries

2 Tbsp. cacao powder

3 loosely packed cups organic spinach

Optional: sweeten with 1/2 a banana or a date or two


Blend all together and enjoy!



1/3 cup coconut oil

1/2 cup cocoa powder

1/4 cup organic full fat coconut milk (Native Forest brand in the can is best!)

1 cup organic grade B maple syrup

1/2 tsp sea salt

1/2 tsp vanilla extract

6 eggs

1 cup dark chocolate chips (70% dark or more is best)

1/4 cup coconut flour

Walnuts (optional to add if desired)

  • Pre-heat oven to 350°
  • Melt together first 3 wet ingredients, then let cool.
  • Mix the next 5 ingredients together and then add the coconut oil chocolate mixture.
  • Next, add the coconut flour (and nuts if using) last and mix until there are no lumps.
  • Scrape into square baking dish and Bake at 350° for 30-40 minutes
